We fully understand if you tread the pepper section at the store with caution, because not knowing what kind of heat a specific pepper will bring could lead to fiery regrets. For instance, whipping up a fun tomato-based salsa dip and unknowingly incorporating an entire chopped up Scotch Bonnet could really turn the picnic around…
So if you wonder if jalapeños and by extension our great new Jalapeño Rolls are right for you, let us guide you through this short (but hopefully fun?) explanation. To measure the heat factor of a multitude of different chilli peppers, the scale of Scoville is still widely used. It dates back to 1912! Classic Scoville, you might say. What Mr. Scoville did was, and I simplify, dilute a large number of different Capsicum species (AKA peppers) in a sugar solution until the ‘heat’ factor dissolved. The score on the scale represents the number of times the sample had to be diluted before the sensation of heat completely disappeared. To illustrate: a regular red or green bell pepper contains none of the fiery spice-bringing component capsaicin, and thus measures zero on the Scoville scale. Moving on then to the thin elongated red chilli peppers that can be found in most supermarkets: these can definitely pack a punch with a score between thirty thousand and fifty thousand, but of course you can tone it down by removing the seeds. Then on to the big guns: a habanero chilli pepper or aforementioned Scotch Bonnet (which also goes by Madame Jeanette), can ring in a whopping three hundred thousand on the scale!
So where on the scale can we find our green pal Jalapeño? Right in the sweet spot! At around 2500 – 5000 Scoville, a jalapeño pepper is neither bland nor bulldozing, and that makes this snack’s crispy goodness excellent for munching on.
